Bonnie Burns-Whitmore

Professor Burns-Whitmore's early contribution to research started with the investigation of how food/food components affect blood lipids and body composition in healthy individuals and topic include eggs, fruits and vegetables, choline, folate, fish oil and presently pistachios and chia (in peer-review) and completed over seven clinical trials in the last 10 years. Gabriel Davidov-Pardo

Gabriel Davidov-Pardo

Davidov-Pardo's interests include the development of colloidal-based delivery systems such as nanoemulsions or biopolymer nanoparticles for protection and control release of bioactive compounds and flavors. Obesity is a major public health problem, so one of his line of research will focus on the development of biopolymer-based systems to replace high-calorie food ingredients and develop food systems to replace artificial components to satisfy the consumer demand for “all natural” ingredients. Olive Li

Li’s research is focusing on areas of Functional Food Engineering and Sustainable Utilization of Natural Resources by recycling and repurposing agro-food byproducts and wastes for value-added food or feed applications. She is interested in developing novel ingredient systems/technologies for sustainable food systems, leading to novel, value-added functional food products containing essential micronutrients and desired nutraceuticals for enhanced nutrition benefits. Lauren Meeks

Lauren Meeks

Meeks' research as a graduate student analyzed the effects of a four-week, pedometer-metered walking study on body composition, fasting blood glucose, blood pressure, and waist and hip circumference in healthy college students. Harmit Singh

Harmit Singh

Singh's research is research is focused on the promotion of more acceptable natural food ingredients and bio-friendly food processing technologies such as membrane and enzymes technologies. Recent projects include purification and concentration of natural food colors using membrane technology and evaluation of antioxidant properties and stability of these colors during application. Professor Singh’s research is also focused on the application of enzymes as a processing aid to affect protein solubilization, allergen degradation, and other food industry processes.
