  • Thursday May 30, U-Hour Collins Carnival, was sponcered by Farmer Boys thank you for the great food .

  • Friday, May 24th at 10 am therewas a tour of Lazy Dog Brea and Chef Gabe Caliendo showed off his test kitchen and garden.

    RFP did a tour/lunch at Lazy Dog Restaurant and Bar.

    Thank you Kristin Conant for organizing the tour and Chef Gabe for all the delicious appetizers and desserts.

    Lazy Dog Restaurant and Bar (formerly known as Lazy Dog Cafe) has a special connection with Collins College. Chris Simms, owner and COO, is one of our newest Board of Advisor members. So it was time to get to know the company. 

    On Friday, May 24th at 10 am we toured Lazy Dog Brea which has Chef Gabe's test kitchen and garden. Chef Gabe gave us the tour and answered all our questions. He is an incredible Chef who worked for Ritz Carlton for many years and had a chance to travel the world. He is young and hip, and absolutely a pleasure to be around. He also created the entire Lazy Dog food and bar menu from scratch. The following link has some fun facts and advice from him.

    Izakaya Honda-Ya

    The word “Izakaya” in Japanese means “a place to eat and drink, sitting down, comfortably.”
    In other words, it is a type of restaurant where you can relax, without worrying about the complicated rules and traditions.

    This restaurant does not offers any wild. entertaining performances by the chefs like you see in other sushi and teppan restaurants.
    But what they do offer is a variety of popular home style traditional foods at reasonable prices, in a relaxing, enjoyable atmosphere, which Japanese food originally is.

    Career Month: Featuring the 20th Annual Hospitality Career Expo, Feb. 21, 2013

    The Collins College of Hospitality Management and the Cal Poly Pomona Career Center will host the 20th annual 2013 Hospitality Career Expo on Feb. 21, from 10 a.m. until 2 p.m.
    The expo is the college’s largest one-day event for students and alumni to gain exposure to numerous hospitality companies. The expo will take place at The Restaurant at Kellogg Ranch.

  • Friday November 16, Month of Flavor: Dinner at Inka Trails Peruvian Restaurant in Clarement CA

    Inka Trails Peruvian Restaurant serves culinary Peruvian cuisine; which is famous around the world for it’s bounty of Pacific seafood. The confluence of native Inkan, Japanese and even Chinese influence makes for a remarkable and delicious unity.

  • We enjoyed seafood dishes and other Peruvian specialties such as Lomo Saltado and Picante de Mariscos.
    The restaurant offered wonderfully prepared food in a friendly and casual atmosphere.
    They also tender a wide variety of fine international wines.

Covel Commons has a wood-fired pizza oven, a popular pasta station, and a grill area.

De Neve is a favorite with residents. Its spacious dining area features several exhibition stations and a popular, make-your-own deli sandwich bar.



FEAST at Rieber Residential Restaurant
FEAST at Rieber features pan-Asian menus that rotate between seven popular Asian cuisines including Chinese, Japanese, Thai, Vietnamese, Korean, Indian, and Hawaiian.

    The annual  Collins College Carnival  hosted by the Hospitality Management Council returned on  May 24  from 11 a.m. – 1 p.m.  The end-of-the-year carnival included lunch provided by Farmer Boys and games. The event was open to all Collins College students, faculty and staff. 

    Those looking for a job? Came out to the Collins College Carnival on Thursday, May 24th @ 11am-1pm where there had a last chance "job fair"!!

    RFP members attended the two days of cooking demonstrations at the Los Angeles Times Festival of Books.
    The event was open to the public and cooking stage seating was based on a first-come, first-served basis.
    All cookbooks were available for sale at the Festival by Book Soup.

  • Saturday, April 14, 2012, from 11:00 am – 4:00 pm Volunteer at The Internation Food Festival

    International Place of The Claremont Colleges is the office that provides support services and programming for the international student community at The Claremont Colleges.  Each year, they organize an International Festival during whichtheir students showcase their cultures and cuisines, with each group preparing and selling some food item(s) from their country or culture.  More photos on their website .

    Our student volunteers worked this great event.

  • Since a major component of the Festival is food, they have developed procedures and purchased (or rented) supplies to support food service.  For example, they provide our students with hats, food service gloves, aprons, etc.  We have coolers, stoves, food warmers, utensils, etc.  They give their students instructions on basic food handling protocols … but, as you can imagine, the Claremont students need additional food safety support.

    • Helped set up the booth for appropriate food service (they erected each booth and delivered necessary supplies such as stoves, coolers, etc., but the students needed assistance to organize their booth for food preparation and service)
    • Stayed with the booth throughout the day to assist Claremont students with maintaining food safety
    • Communicated any needs or issues as needed throughout the day.

    Hospitality Uncorked was the college's new gala fundraiser. The event was held at the JW Marriott Los Angeles. Join the college on  March 3  as it honored SBE Founder and CEO Sam Nazarian with its most prestigious award: the Robert Mondavi Food and Wine Award.
    Over $200,000 was raised fir the College.

  • SOLD OUT Monday March 5 from 1-4 p.m. in the Demo Auditorium.
    Collins College students had a unique opportunity to attend a free Japanese cuisine seminar with tastings.
    The event was sponsored by the Organization to Promote Japanese Restaurants Abroad. The seminar included live demonstrations and tastings throughout. Space was limited and it was first-come, first-served.

  • December 2, 2011 Midnight Madness: RFP made drinks for this event

    Midnight Madness is a Cal Poly Pomona tradition and now, a RFP quarterly tradition as well. RFP headed out of Collins College and created two sweet hot chocolate drinks for the students attending the festivities. We mixed up a peppermint hot chocolate topped with marshmallows and a Mexican hot chocolate anchored with a mini candy cane. Members showed up to support RFP by mixing and serving the velvety hot chocolate. Thanks to all those who came out! It was a great way to end the quarter!

  • Saturday Nov. 19 from 11 AM – 3 PM: Food Truck Mania over 12 trucks at Claremont High School,

    Winner of 2011 Great American Food Truck Race; Lime California Crisp and
    the Winner of the Cupcake Wars; Suite 106 Cupcakery was there with many others.

  • Thursday November 17, 5:30 PM Roscoes House of Chicken and Waffles Menu

    Another event is approaching! November's theme is: The Best Thing I Ever Ate: Breakfast for Dinner!  
    From Harlem, "chicken and waffles" was brought accross the country to los Angeles and founded in the mid 1970s.

    RFP headed to Roscoe's Chicken and Waffles in Pasadena for…can you guess? Chicken and waffles! Members shared golden, crisp fried chicken that was flavorful and tender. The waffles were drenched in butter and syrup and munched on with joy. Everyone had a smile on their face for this breakfast specialty. Thank you RFP members for coming out in your RFP shirts!

    RFP was given a tour of the beautiful café and then sat down for a fantastic 4 course lunch. We started with their famous creamy crab bisque, then a fresh fig and berry salad with arugula, a club sandwich with rosemary fries, and ended with a white chocolate and raspberry bread pudding. While enjoying the lunch, the regional manager for all Orange County Nordstom Cafes, the store manager, and the executive chef, spoke to us about what makes Nordstrom Café a unique dining experience.

    Thank you to Ms. Anita Ratnathicam who provided us with an exceptional look into the Nordstrom Café.

  • Thursday, October 27, 2011 Health Fest

    Fall quarter's health fest was located in the University Quad and held to increase awareness about the consequences of drinking alcohol.

    RFP was asked to create mocktails, a non-alcoholic play on the original cocktail drink. We created two drinks: The Jim Collins, a fruity cranberry lemonade topped with Sprite, and the CPP Paradise, a pina-orange colada. Both drinks were a huge hit. Thanks to all the members who came out to help make and serve the drinks!

Dear Collins College Volunteers:

Thank you so much for volunteering for the Los Angeles magazine: The Food Event on Sunday, October 23!  All of you were amazing and worked so very hard in the hot weather!   I know that many of you were pulled in what seemed like fifteen different directions at once, but you stuck with ALL of the MANY requests!  I want to thank you for your tireless efforts for hauling trash; making sure that the vendors had all of the service wear; and especially, helping them to unload their items to their booth!

Thank you also for the great debriefing session immediately after the event.  All of your comments were incredibly valuable and were very observant. 

We hope that Collins College will volunteer again next year!

We wouldn't have been able to pull off the event without all of the hardwork from our volunteers. We truly value all of the time and effort put into our event and hope each student was able to meet a few chefs and gain a bit more experience in the hospitality industry.

The Food Event 2011 is Los Angeles magazine's sixth annual culinary extravaganza. The day featured great chefs, culinary experts, sommeliers, plus lots of food, wine, and other treats -- all for one price. Attendees watched celebrity chefs in the demonstration kitchen and participated in panels with the experts in the Conversation Lounge. The icing on the cake that sets this culinary event above others is the incredible rural setting, the Saddlerock Ranch in Malibu, home to Semler and Saddlerock wines. The ranch boasts acres and acres of natural beauty, vineyards, rolling hills, animals like llamas and zebras, and space to spread out and relax for a true escape from the city, but with just a short drive.

  • Sat & Sun, October 15 & 16, 8am – 5pm Pumpkin Festival
    Where Farm Store at Kellogg Ranch
    Description Food and Activities. Thankj you to those who joined us for the 19th Annual Pumpkin Festival where you could choose from thousands of pumpkins right out of the patch.

  • Some ate and played games at the College of Agriculture student club booths or headed over to our popular Insect Fair featuring nearly 500,000 live and preserved insects (runs from 9am-5pm).
    They was also a corn maze, petting zoo, horse rides, entertainment, and lots of activities for kids! If you like pancakes, they've got them.

    SDpecial thanks to those who had their pancake breakfast professionally prepared by Collins College Chefs Saturday morning from 8am-11am.
  • Friday October 14, 2011 Pink's Dinner: The Best Thing I Ever Ate, Tourist Attraction

    Thank you to those of you who came to the Pinks Hotdogs dinner! We truly enjoyed meeting all of you. If you were not there, don't worry, because we have plenty of tours/ dinners, and events planned throughout the year.

  • October, 2011 Current and Past e-board dinner at A-Frame

    RFP student leaders had a great dinner at A-Frame. They waited an hour for their table, but were given snacks while waiting and the conversation made the wait go fast. The food was eaten family style and everybody had a chance to try the dishes.     Hello Volunteers,

    I want to first say how proud of you I am of all of you!

    This weekend was one that tried peoples metal and pushed each and everyone to step up, follow through, and to work past the lack of sleep to reach the tasks at hand.

    Also I wanted to let you know that your work did not go unnoticed by the staff at Pebble Beach this weekend. Before leaving I  had the opportunity to chat with Margo Daniels, our volunteer contact, and she was very appreciative of all the hard work that each and everyone one of you put in ( front and back of house).

    It is always fabulous to receive positive feedback from the Pebble Beach crew so as to maintain the relationship the school has with them. 

    On another note I want to congratulate those that were offered job offers this year! You all worked tirelessly and truly worked the show and didn't let the show work you (As Mr. Van Straatum would say)! Congratulation to Kenney Dokko, Akeel Shah, Matt Cruz, and all other volunteers that are currently escaping my mind.

    I can't say it enough: I am proud of all of you and your hard work! Finally I want to say thank you to all who drove up and back.

    I know the drive back was a challenge and I and the RFP Board are glad you all made it back safe and sound.I hope that your week will allow you all to recover and get sleep so that you don't feel behind the eight ball.

    "A group of students went to Honda Ya, a Japanese restaurant last Thursday, as a final chance to relax before a week of heavy duty studying for finals. Honda Ya isn't your typical Japanese restaurant. Sure, they have sushi and sashimi, but their main focus is on small bites and "yakitori" or skewers. The menu was very extensive and we tried a lot of different dishes that were all very delicious. The best part? We got to sit on the floor on mats; called tatamis and ate Japanese style with our shoes removed. Thank you to all those who came out!"

    • RFPhad a guest speaker, Kevin Bening, the Western Regional Sales Manager of the Malibu Family Wines Semler Family Malibu winery. He spoke to us about what he does for the Semler and Saddlerock wineries and gave students advice about the beverage industry. Experience and wine certification were at the top of his list.

    After a great quarter of events, the RFP e-board and a very special guest went to Animal for an end of the quarter dinner to discuss future events and of course, relax after grueling finals. The e-board got to eat fantastic food, and talk to Vinny Dotollo, one of the master minds behind Animal.     Chicken liver toast, pig tails and ears, and marrow bone were only a few of the many dishes the e-board got to enjoy. The food was great, and the company just as fantastic.     Chefs Jon Shook & Vinny Dotolo

    Jon Shook and Vinny Dotolo opened Animal restaurant in June 2008 to widespread acclaim. In the two years since opening it's doors the duo has been awarded Food & Wine Best New Chefs of 2009, received a James Beard nomination for Best New Restaurant, Rising Star Chefs by Star Chefs and Wine List of the Year by GQ Magazine.

    They have been covered in numerous publications, including, The New York Times, The Los Angeles Times, LA Weekly, The New Yorker, Travel + Leisure and Food & Wine magazine, and have appeared on The Morning Show, Last Call with Carson Daly and NPR's Good Eats. The duo still operates a full service catering company, which opened the door for an appearance on Iron Chef America and paved the way for their own Food Network show, 2 Dudes Catering. Continuing their success, the guys wrote their first book for Random House publishing titled, Two Dudes One Pan. It was voted one of NPR's “10 Best Cookbooks of 2008”.

    Jon and Vinny met while attending culinary school at The Art Institute of Fort Lauderdale in Florida. Their first job together was in the kitchen of famed chef Michelle Bernstein at The Strand Restaurant in South Beach. They continued to work in numerous other top chef kitchens in south Florida, including: Mark Millitello's of Mark's, Oliver Saucy of Café Maxx and Doug Reese of The River House. They left Florida to work with Ray Roach at the Wildfower Restaurant located in The Lodge at Vail in Vail, Colorado. Continuing their trajectory west, they landed in Los Angeles in 2001 where they worked with Govind Armstrong and Ben Ford at Chadwick's before launching their own catering endeavor, and ultimately their first restaurant, Animal. They recently acquired a second restaurant location which is scheduled to be open soon.

    E-Board ended the quarter at a high note.

  • Wednesday Evening November 3rd • 6:30pm @ Collins 7:00pm in West Covine: Indonesian Dinner in West Covina

    On Wednesday, November 3, club and E-board members of Roundtable for Food Professionals  journeyed  to Merry's House of Chicken, in West Covina, to explore the flavors and dishes of Indonesian cuisine.

    The restaurant is a nice little local spot that is a highly welcoming and enjoyable place for a nice evening experimenting Indonesian cuisine. All students that attended eagerly jumped into the menu and all the different plates on the menu. The restaurants owner was continually helpful in picking out dishes from start to finish; she was eager to offer her advice on menu items and inform students about her cooking classes that she runs.

    As a big picture view, the first month of flavors of the 2010/2011 school year, was a great success; members were able to socialize with one another, explore a  cuisine  many had never tried, and learn about local another great local  restaurant.

In attendance are 35 different restaurants from the L.A. area, 37  Wineries , and 5 different  celebrity chefs  performing demos.

    Synopsis: Los Angeles: The Food Event On,Sunday,October 24 2010 a group of twenty students attended theThe L.A. Food & Wine Event: "From the Vine" Event 2010 as volunteers. Students were given the task of aiding restaurants, in chef demonstrations, and wineries at the event throughout the day. While fulfilling volunteer duties, students were given the opportunity to interact with a number of different restaurants, chefs, wineries, and taste the wide variety of cuisines at the event. Just a few of, the many, restaurants that in attendance were: Bouchon, Street, Magnolia Bakery, SweetSalt, and Malo.  Overall the volunteer opportunity was a huge success. We have, as Collins College students, been asked to come back next year and work the event as we did this year; As well as making lasting connections with the directors at Los Angeles magazine, the Semler Family Malibu wine representatives, and with numerous other restaurants at the event. I am confident that this opportunity has opened a number of doors that will further aid Collins College students through their journey in discovering where they want to be in the hospitality industry.

    The Food Event: From the Vine

    Los Angeles magazine's "The Food Event: From the Vine 2010," the fifth annual culinary extravaganza, also celebrating Los Angeles magazine's 50th anniversary and the November "Mexican Food Lovers Guide" issue. The day featured great chefs, culinary experts, sommeliers, and more, up close and personal, plus lots of food, wine, and other treats, all for one price—unlimited food and beverages; all demonstrations by celebrity chefs in the Snyder Diamond Sub-Zero/Wolf Kitchen and panels like the Top Chef Masters panel in the Conversation Lou nge (on comfy furniture); plus parking included. The icing on our cake and secret weapon that sets this culinary event above others is our host partner and the incredible setting for the event, the Saddlerock Ranch in the Malibu Hills, home to Semler and Saddlerock wines. Acres and acres of natural beauty; vineyards; rolling hills and ponds; shade trees with swings; animals like llamas and zebras; and space to spread out and relax, a true escape from the city, but just a short drive.

  • RFP welcomed, Kiyomi Emi, an executive from Los Angeles magazine spoke about the  hospitality industry  and the upcoming volunteer event opportunity. She is a Public Relations liaison that works with Los Angeles magazine for restaurants and chefs in the  Los Angeles area. Ms. Emi came to talk about the media and how it relates to the hospitality industry. She discussed her role withthe magazine and how they work to promote restaurants and chefs throughout Los Angeles and across the country. On top of shedding some light on her role in the hospitality industry she also informed selected volunteers about the LA  Food Event 2010:From The Vine. 
  • Saturday, October 16; 5PM-9PM , The Awesometown Gourmet Food Truck Festival in the city of Valencia.

    The Awesometown Gourmet Food Trick Event, on Saturday October 16,2010, was an amazingly eye opening experience for every RFP member who attended. There was a total of ten members that attended the event from the Collins College. All were excited to try the variety of different food trucks that were at the event. Truck Cuisine ranged from the classic Korean BBQ to Sprinkled Cupcakes. Some of the most memorable cuisine that the student members enjoyed were "incrediballs" (meatballs from Greatballs Food Truck and the Sweet Potato fries topped with goat cheese and raspberry jam.) 

    RFP Pres. places order ------- Food Tasting by RFP Members ----------The WOW factor On top of being able to explore the wide variety of cuisines available at the the food truck festival, RFP members were given the opportunity to have a private meet and greet/tour of the" Greatballs on Tire"s Food Truck, owned by Clint Peralta. He also allowed time for a short Q&A with the members regarding the food truck. Overall the short tour was very informative and interesting.

    We on the RFP E-board thank those that came to this event.

    Month of Flavors : RFP went out once a week for the entire month of January to dine and enjoy unique cuisines of the world.  These weren't the more common cuisines like Italian or Mexican; these events weres a full-fledged cultural experiences where we tasted cuisines from Ethiopia, the Filipines and Burma. This was about stepping out of our comfort zones. Thank to all who joined us for good food and great company! We enjoyed celebrating the diversity of our planet though learning about cuisine

Fall & Summer '09 Past Events

  • This Fall quarter Round Table for Food Professionals had a packed schedule that started off with having a Welcome Back BBQ! Many students came out to enjoy free hamburgers and met many of the Collins College students! We also went to XIV Michael Mina’s exclusive restaurant located on the Sunset Strip! Where we were able to taste 10 different dishes that we all shared while the restaurant’s manager talked about his experience and decanted a bottle of wine for us. Next, we volunteered at the San
    Diego Food and Wine Festival where 70 different San Diego restaurants and 170 world-class wineries and spirit producers came! It was a delightful on-hand experience
    and we also got to enjoy the rest of the show, valued at $140 a ticket, for free!

    For the end of the quarter we had lecturer Michael Hawkins, owner of Green Street, Pasadena, come out to speak to us at the Collins College. Mr. Hawkins brought classic
    menu items from his restaurant to the school. It was a free event where RFP enjoyed the food and listened to him speak about entrepreneurship. Students were able to
    ask questions about how he started his own restaurant and what they usually look for in an employee.
  • Tuesday, December 1 at 6:15pm - Presentation by Michael Hawkins from Green Street Restaurant, Pasadena. Proceeded by a selection of foods from Green Street Restaurant.

    This was a seminar/speech about entrepreneurship, Green Street Restaurant, and the upcoming class in the Winter Quarter.

    Green Street fights chain incursion with flexible menu maneuver

    PASADENA, CALIF. -- This city's commercial landscape has changed dramatically since 1979, when Michael Hawkins and his family opened Green Street restaurant in its original, 64-seat site.

    The restaurant then "had no sign, was on a one-way street going the wrong way -- everything was wrong," Hawkins recalled. "But we had waits all day long." Back then, there was little restaurant competition in this affluent city north of Los Angeles, known internationally for its annual New Year's Tournament of Roses Parade. Green Street thrived in Pasadena, moving eastward several blocks in 1983 to roomier, 200-seat quarters, Hawkins said. Then in the early 1990s, the city's Old Town district began to be revived and gentrified, drawing in a lively night trade and a proliferation of restaurants. The revival also attracted to Pasadena some of the flashy, big-box retail and restaurant operators found from coast to coast. Meanwhile, Green Street's previously prosperous Lake Street corridor, which Hawkins said was once "the Rodeo Drive of the San Gabriel Valley," withered, leaving single-unit restaurant operators like Hawkins with few weapons to fight national chain competition, rising wages, increased insurance premiums and see-sawing commodity prices.

    "Either you whine about it, or you find a solution," Hawkins said. He and his partners -- his wife, Joanne, his sisters Catherine Rowe and Lisa Harrison and their husbands, Grant Rowe and Bob Harrison -- "decided to maintain Green Street as a viable business," Hawkins recalled.

      Brandon Heist brought Sean Van Straatum and Ray Bishop with him to Carmel to work with 2 Michellin Star Meadowood Chef Christopher Kostow at the Food & Wine Magazines Harvest: Farm-to-Table Festival.

      It was a great experience and networking opportunity for them to meet fellow chefs and industry professionals. They made sure to let everyone know that they drove all the way up from the Collins College just to be there.

      It just so happened that Coastal Luxury Management (CLM), the same company that runs the Pebble Beach Food & Wine Festival, was in charge of this event. They all recognized our students (well basically just Sean haha) and were very excited to hear that HRT Students are coming back to Pebble Beach in April with an even larger group consisting of RFP & UC members.

      I wanted to thank the e-board for a great start. Thank you to those of you who came to the Chipotle mini-meeting last night. It was productive and we prepared ourselves a little better. However, a BIG thank you to everyone, since all of you were able to attend both the retreat and broncofusion!! I know the retreat can be tough to sit through sometimes but thank you for coming as it is very important to the club's success. Broncofusion was as hot as ever and you all pulled through. Thank you so much Brandon for the flyers, Jimmy for the props and Max for the props, poster as well as mingling and coming out of your shell. However, everyone did amazing and I'm very proud to have such a great e-board! What a great way to kick off the year. Keep it up guys!

  • Saturday evening, June 6th was our Transitional e-board dinner at Campanile Restaurant in Los Angeles.

    The dinner allowed members of both last years and next years e-boards the opportunity to sit down and discuss plans for the upcoming year.

    Executive Chef Mark Peel provided the e-board and Professor Barbara Jean Bruin with a fantastic meal and an amazing tour of his restaurant and kitchen.

    1.  Farmers Market (no apostrophe!) was created in July 1934.

    2.  Farmers Market was “invented” by Roger Dahlhjelm, a businessman, and Fred Beck, an advertising copywriter.  They asked the owners of “Gilmore Island,” the former dairy farm at 3rd & Fairfax, if they could invite local farmers to park trucks on vacant Gilmore land to sell fresh produce to local shoppers.

This was a fabulous HOT CONCEPT Event! Chef Jeremy Peters' class at Cypress College prepared this wonderful meal and served our members & guests at their cooking stations. The presentation of each entrée, the artisan cheeses & breads & farmer's market crudités was truly amazing to the eye and delightful to the taste. Simply tantalizing. Chef Jeremy Peters was our Speaker during the serving of the scrumptious desserts. He spoke to us about his challenges and rewards and commitment throughout his career, which has included Executive Banquet Chef for Disney's Grand Californian Hotel, instructing at Orange Coast College, and Coaching for the A.C.F. Junior Hot Food Team for OCC since 2000 to present. Chef Peters exemplifies leadership qualities and professionalism all the while with a relaxed charming personality.       Two-thirds of Americans are changing their diets for their health, and the demand for healthier menu options is at an all-time high. This seminar focused on new health trends and ways to incorporate healthier items into your menu.  Foodservice professionals, Dr. Elizabeth Sloan, Chef Paul Buchanan, and El Pollo Loco's Nancy Cutler shared what, in this regard, has been working in the marketplace. Also, there was  a cooking demonstration on energy-efficient, gas-fired commercial kitchen equipment.

    Students came to learn about the flavors of Southeast Asia

    Southeast Asia, a land of culinary indulgence, is populated by people of intrigue and ruled by craving palates. Vibrant flavors of Southeast Asian cultural life adorn the region’s exquisite culinary canvas. Here, food is much more than sustenance; mealtimes form the very basis of everyday life, and they are the social glue that bond friends, family and colleagues.

    Chef Robert Danhi guided the RFP members through not only the tastes but the sights of this exotic region. He shared his vast culinary knowledge as well as personal photos from his decades of cooking and breaking bread in the homes, street markets, and restaurants of Southeast Asia. The photos are published
    in his book, Southeast Asian Flavors, which demystifies Southeast Asia’s cuisine by translating Robert’s years of photography, culinary training, education, and resulting expertise into an adventure of recipes, stories and practical advice on energy-efficient cookery.

    Chef Robert Danhi began his culinary career at fifteen and has not left the kitchen since. Sous chef by nineteen, head chef by twenty-one, and a graduate of the Culinary Institute
    of America (CIA), Robert went on to become one of the school’s most dynamic chef instructors. He is internationally recognized as a Certified Culinary Educator, Certified Hospitality Educator, Certified Executive Chef, and Certified Culinary Professional.

    This event was truly a great experience. Going in to it, I was unsure of what to expect and a little apprehensive because I had never been to any event without a current President, or e-board member for that matter. First off, upon arrival, I noticed the restaurant was gorgeously decorated with lush furniture and great mood setting lights. The atmosphere was unforgettable and very home-like; it was immediately welcoming. The food served was outstanding, very detailed, and perfectly cooked. We had an opportunity to meet and talk with the executive chef, Stephane Beaucamp, who talked to us about bringing the quality back into restaurants. He was expressing his ideas of what restaurants should be; having an intimate dinner with quality tasting foods and taking the time to enjoy the outing. But the thing that impressed me the most was the members of the club.

    It was a group of older individuals from the parent chapter, who had their careers started already and had much experience. We all talked to each other and I found out that they were a group who met every so often to create bonds with one another and network to help each other out in the food industry. They all had different backgrounds and agendas such as food science, and food art and decorating to name a few. After one dinner, the members were so welcoming and thoughtful that they told us to contact them for anything if we ever needed them. I thought this was amazing that they put themselves out there for students and it really showed how hospitable and wonderful the industry is.

    We made our way to Laguna from the Collins School. Dr. Brown drove his '58 Rolls Royce which Dr. Dewald truly enjoyed. We were met by several Collins Alumni: Dominic, Nicole, and Patty and Hotel Executives Mr. James Bermingham, General Manager, Mr. John Kolaski, the Loft General Manager, and Ms Heidi Baggott the Catering & Conference Service Manager.

    We were given a complete tour by Mr. John Kolaski, the Loft General Manager. We were shown a regular room and the Catalina Suite, the Spa Montage, the Mosaic Bar & Grille, the Studio Restaurant, the Loft and banquet kitchen and the 2 Million dollar wine cellar.

    This was followed by an exquisite four-course luncheon. Several Executives from the Resort came by to address the students and answer questions:

        • Mr. Ed Snavely, Director of Special Projects, Montage Resort & Spa and Board of Advisor member of the Collins School;

    We made our way to the Ritz-Carlton Laguna Niguel down the road for our next tour. We were met by Mr. Alex Sweredoski, the training manager and Ms Marguerite Dowd, Sales & Marketing Executive Administrative Assistant from the Sales Department. Mr. Sweredoski introduced us to The Ritz-Carlton Motto, Credo, and the 3 steps of Service. The tour included the lobby, concierge, ENO - Wine Cheese and Chocolate, Restaurant 162',the swimming pools, a guest room, the concierge floor and the Presidential Suite, the banquet facilities, the gardens, and the beach.

    In addition, we met up with several Collins School Alumni: Ms Meredith Ganong (Front Office Supervisor) Ms Jill Gallego from New Olreans who was enrolled in one Collins School class to name a few.

    We would like to thank all the people involved in arranging the tour.

  • The Peninsula Beverly Hills Saturday April 14th:
    Members of RFP and CPHA toured the Peninsula Hotel property.  Mr. Christian Boyens, Ms. Jaime Friedman, and Mr. Roberts were kind enough to guide us through the FOH and BOH areas of the hotel.  After the tour, we enjoyed a three-course lunch in the private dining room of the Belvedere Restaurant.

Winter '07 Past Events

  • March 2nd & 3rd, The California Restaurant Association Educational Foundation (CRAEF) held the fifth annual California ProStart Competition, sponsored by Boyd’s Coffee held at The Collins School of Hospitality Management.

    The event brought together talented high school students from ProStart programs throughout California who are the future of the restaurant and foodservice industry. Teams participating in the culinary competition demonstrated their creative abilities through the preparation of a three-course meal in 60minutes. Their performance during the practical session is observed and rated by judges from the industry, including three Certified Master Chefs.

    Teams participating in the management competition demonstrated their knowledge of the restaurant and foodservice industry by competing in two events. In the case study, students are tested on their communication skills and their ability to apply their knowledge of the restaurant and foodservice industry to practical situations. The second portion of the competition, the Knowledge Bowl, is a question-and-answer “game show” style event hosted by Guy Fieri, a Food Network

    Winning teams from each competition are awarded first, second and third place trophies and scholarships to pursue a postsecondary education. The first place winners of each culinary and management competition will be awarded a trip to compete in the National ProStart Student Invitational in Charlotte, NC from April 20-22.

    Congratulations to Newport High School for taking first place in the Culinary Competition and La Quinta High School for taking first place in the Management Competition. These teams showed exceptional performances and displayed impressive professionalism. It is great to see the future of the hospitality industry possess great passion at an early stage in their careers.

  • Friday 11/03 - McCormick & Schmick's Restaurant Tour @ 2 pm, Irvine CA
    The tour of McCormick and Schmick's Seafood Restaurant was great! The restaurant's layout and food/beverage service is truly unique.  The restaurant's prep kitchen is on the second floor, where everything must be hand carried up a flight of stairs for storage and preparation.  The restaurant also has its own brewery and night club!  The food is fresh everyday, and all juices for drinks are freshly squeezed at time of order.  The restaurant staff is very knowledgeable and hospitable.  We were treated to delicious appetizers after our tour, and given helpful advice to guide us along our careers in the restaurant industry.

    I would just like to thank all the people who participated in attending the  Australian Food and Wine Expo at the Luxe Hotel in LA. It was a great event. There were so many exhibitors from Australia showing their many different products. The food was amazing and it was interesting to see how their tastes in cuisine differ from American cuisine. At the expo, there were Aborigines playing the didgeridoo in their native costume about every hour or so. Hopefully, the next time there is an expo that we are invited to attend displaying cuisine from a different country more people will be able to attend.

      Second Harvest Food Bank Orange County

      Kristin Newman, RFP President, attended the event.Kristen and I attended the Parent Chapter meeting last Wednesday at the Second Harvest Food Bank in Orange. We were both given a tour of the facilities and I was shocked at how much food and supplies were stored in the warehouse. It was amazing to see what was needed to support the unfornute in orange county. Even more amazing was how they were short stocked on everything because alot of their donated goods had been sent to the Hurricane Katrina relief effort. The warehouse had three huge rooms filled with food and supplies plus the biggest refrigerator and freezer I had ever seen. Everything that was stored in the Second Harvest Food Banks warehouse was donated by suppliers. There were only about 14 employees who worked for the Second HarvestFood Bank in Orange but they had thousands of volunteers. They obviously are able to do what they do because of the volunteers who help them out. After or tour Kristen and I had the oppurtunity to listen to the owners of Wahoo's Fish Tacos present his day to day schedule and tell us about the greatthings he does for charities and fundraisers. I have never heard of anybody with such a busy schedule besides myself and trying to manage my classes at the Collins School. Mr. Lee told us of how he tried to be apart of as many charity events and fundraisers as he could handle and that in 2004 he had done around 300 events. There is no spare time in his schedule but he sounds like he still enjoys his job and what he has done in his career. All together the meeting was very informative and interesting and Kristen and I had some great Fish Tacos and cheesecake to go along with everything. We all know what goes on in restaurants. And, I especially have worked for quite a few restaurants but I haven't seen a place like the Second Harvest Food Bank and I really had great appreciation for it after learning about it on the tour.

    You may have been approached about this event already but here is a reminder. Dr. Chesser is looking for volunteers for both days. Friday March 4th will be the Culinary Competition (BOH uniform) and Saturday March 5th will be the

I will forward your availabilty to Dr. Chesser. It will be an exciting event to watch high school student's battle it out in both areas of culinary and management.
    Escofier Dinner; Monday February 21st, 2005
    The Advanced Culinary Class (HRT 381) and the Advanced Wine Class (HRT 316) are putting on a dinner + wine pairing. There will be appetizers and champagne, 6 courses and wine to pair with each course. The event costs $50 a person and is all inclusive. If you would like to attend please make reservations and let us know and RFP will pay $10 toward your meal. You can't beat that folks! 6 courses and wine for $40! Space is limited so get those reservations in now and let me know when you have reserved your seat. You can talk with Chef Brown to make the reservations.
