Executive Chef Kristopher Arguin says AI serves as “foundational infrastructure” that accelerates recipe development, reduces waste and supports food safety — but only with human expertise guiding it: “If you stay out of technology and don’t try to move forward, you’re just left in the dust.” Assistant Director of Dining Services Carlo Arceo adds that while AI expedites repetitive tasks, “you still need the culinary knowledge” to ensure quality and accuracy at scale.
