The Restaurant at Kellogg Ranch
Overlooking beautiful, rolling hills, the Restaurant at Kellogg Ranch at Cal Poly Pomona boasts one of the area’s most romantic and chic settings. Operated and managed by hospitality management students, the restaurant embodies Cal Poly Pomona’s learn-by-doing tradition and is a central component to food and beverage track of The Collins College of Hospitality Management’s curriculum.
The menu at at the RKR often features fresh fruits, vegetables and herbs from the restaurant’s one-acre, award-winning culinary garden giving students a farm-to-table lesson in seasonal menu planning and preparation. The garden, nestled on the eastern hillside just outside of the restaurant, is maintained by Don B. Huntley College of Agriculture students and harvested by hospitality management students.
Undergraduate students sharpen their professional experience by providing excellent guest service, preparing quality food, and creating and executing strategic restaurant management plans. They rotate weekly through various positions in both the front of the house and back of the house in order to learn all aspects of a hospitality operation.
Some of the finest professionals in the hospitality industry facilitate student learning at The Restaurant at Kellogg Ranch. The faculty team this summer includes longtime lecturers and proud alumni Ernie Briones (1992) and Lesley Butler (1990). Chef Briones facilitates back of the house instruction and guides students through the culinary aspects of the restaurant. Butler leads front of the house instruction and oversees students' management and marketing of the establishment.
