Claudia Serrato is an adjunct faculty in the Department of Ethnic Studies at the College of Education and Integrative Studies. She teaches RS 4140 (Edible Landscapes) at the Lyle Center, where her course integrates hands-on activities such as plant identification, cooking with onsite vegetation, and hosting a community meal.
