The Restaurant at Kellogg Ranch

Faculty & Staff

The Restaurant at Kellogg Ranch is run and managed by Collins College students. RKR operates as a Cal Poly Pomona course, guided by experienced industry professionals on faculty and staff — all proud Collins College alumni. 

Faculty members Lesley Butler and Kenneth Dokko provide front-of-the-house instruction for both lunch and dinner classes, while Executive Chef Matthew Vaillette leads the culinary instruction.

Supporting the faculty team, the culinary laboratory coordinator oversees purchasing and provides operational support for the restaurant.
