FST Student Wins at CSU Competition

A food science and technology student took first place in her division at the Cal State University system-wide research competition.

Sarah Caballero won the Biological and Agricultural Sciences, Undergraduate session at the 33rd CSU Student Research Competition, which was held April 26-27 at Cal State Fullerton.

Caballero’s project was “Impact of Protein Type and Maillard Conjugation on Nanoemulsion Formation and Stability at Isoelectric Point.”

A fifth-year student from Yorba Linda, Caballero was chosen for the system-wide competition after giving one of the top oral presentations at Cal Poly Pomona’s 7th Annual Research, Scholarship and Creative Activities Conference on March 1.

Caballero was recently named the Julian A. McPhee Outstanding Student Scholar as the valedictorian for the Huntley College of Agriculture’s Class of 2019.

She will go onto compete in the Institute of Food Technologists’ Undergraduate Research Competition at the IFT19 Annual Meeting June 2-5 in New Orleans, La.
