Students Share Research Work

Equine and feline behavior. The impact of social media influences on Generation Z’s sustainable purchasing behavior. How COVID-19 affected consumer behaviors and university students’ attitudes before and after food safety training.

Students in disciplines from across the Huntley College of Agriculture shared their work at the end-of-the-year Student Research Scholarly & Creative Activities (RSCA) Showcase on May 7.

The event was meant more for fun than for serious competition, said Associate Professor Olive Li, who is the college’s director of research and graduate studies.

“It’s hard to research in general, so it’s awesome you took the time to do this,” she told the students.

Nineteen projects were presented during the virtual event. Students who had worked on the projects made presentations in breakout rooms. Guests could move from room to room hearing about their various projects.

Although it was not a competition, a vote was held to determine the most popular project. Sarah Caballero, a graduate student in food science and technology, won the vote for her project on “Encapsulation of Orange Pomace Antioxidant in Pea Protein-Pectin Complexes.”

Assistant Professors Helen Trejo (apparel merchandising and management), Claire Whang (apparel merchandising and management), and Eeman At-Taras (animal and veterinary science) each tied for having the most course-related projects presented at the event.
