Banfi Foundation’s Scholastic Tour Comes Full Circle For '05 Alumnus

Full Circle! In 2003, Chad Colby , CCHM ‘05 was selected to attend the Banfi Foundation’s Scholastic Tour to travel to Italy for seminars on Italian wine and food culture. This would be the first in many trips to Italy for Chad as he was so inspired by the cuisine and culture.

That same year, Colby talked his way into work at Nancy Silverton and Mark Peel’s, Campanile. Chad then followed Silverton to the Mozza complex and later ran the kitchen at Mozzas Chi Spacca, This summer, Colby and his partner, Kevin Caravelli opened Antico . Bill Whiting , Banfi’s Director of Wine Education dined at Antico with Professor Margie Jones on “Day 17”.
