Faculty, students, and staff tasted and evaluated food products created in a food science and technology class.
Students in FST 4290L – Food Product Development Lab have worked on creating innovative food products this semester. In early November, they invited the Cal Poly Pomona community to sample their creations.
The products the students created included:
- Halva a Nice Day: Halva Frozen Yogurt Bites are a high-protein frozen dessert inspired by Middle Eastern flavors, featuring halva, a sesame- and sugar-based confection, combined with nonfat Greek yogurt, tart pomegranate and raspberry chia jam, and coated in a glossy dark chocolate shell.
- Sticky Honey Pudding: This is a date- and honey-based pudding cake with chopped pecans, topped and infused with a caramelized honey sauce. The honey gives the cake rich sweetness, moistness, and satisfying density. Nestled at the bottom are chopped pecans providing a crunchy texture and buttery flavor. This was made with Cal Poly Pomona honey.
- MuscleMac: This is a protein-rich, dairy-based macaroni food product tossed in a creamy Greek yogurt sauce. MuscleMac meets the needs of consumers by fortifying the pasta noodle with real milk proteins, delivering lasting fullness and balanced nutrition with its high calcium and vitamin B, along with its 20 grams of protein, 45 grams of carbohydrates, and 2.5 grams of saturated fat. It offers a convenient meal that combines comfort, satiety, and real dairy nutrition in every bite.
- Tropilus: Inspired by the popular drink Orange Julius, Tropilus is a frothy mango-flavored yogurt beverage that utilizes the power of egg. Tropilus comes in a 240-milliliter plastic bottle with a printed, shrink-wrap label. In a single serving, the drink's velvety, frothy texture, supported by the structure of eggs, creates a thick, creamy, indulgent beverage without cream, allowing the use of nonfat milk and low-fat yogurt.
- Cozy Cookies: These are soft-baked oatmeal raisin cookies infused with chamomile and lemon balm to help little ones relax and wind down before bed. Each serving provides over 15 grams of whole grains. Blended with cinnamon, vanilla, and soothing botanicals, every cookie delivers a warm, comfy flavor that is perfect after a busy day. This product has been formulated to meet USDA Smart Snacks standards, with only 1.5 grams of fat and 9 grams of sugar per 90-calorie serving. Cozy Cookies are suitable for children ages 4 and up and come in a resealable sleeve of 40 cookies (8 servings).
