This program is a 4-week Study Abroad course that explores the food systems in Navarra, Spain with an emphasis on cultural immersion and Spanish language, food processing, nutrition and dietetics perspectives in Spain and sensory evaluation of foods. The course will provide a general cultural immersion into the Spanish and Navarrian food culture. Food Science and Technology students will have access to a pilot plan to have hands-on learning of Food Processing. Nutrition students will compare dietetics approaches in Spain and the U.S. through seminars and hands-on experiences. All students will conduct sensory evaluation of foods with “Denominación de Origen Controlada” (destination of origin) and create a fermented beverage from scratch. Course includes cultural and technical half and full day excursions to locations in Pamplona and surrounding cities.
